Citra (HBC 394)
Released in 2008 by the Hop Breeding Company, Citra revolutionized craft brewing worldwide. Known for its explosive, fruit-salad aroma of fresh citrus and tropical fruit, it has become the standard hop for American IPAs and Hazy IPAs.
Mosaic (HBC 369)
The daughter of Simcoe and a Nugget-derived male, Mosaic earned its name because it delivers an intricate kaleidoscope of flavors. It pairs blueberry jam sweetness with crisp herbal and pine qualities.
Centennial
Often affectionately dubbed 'Super Cascade', Centennial was bred at Washington State University in 1974. Famous as the sole hop in Bell's iconic Two Hearted Ale, it provides a clean, elegant floral-citrus balance.
Saaz (Žatec)
The noble aristocrat of European hops. Grown in the red soil of the Žatec region for over 700 years, Saaz defines authentic Bohemian Pilsners and Belgian Saisons with its warm, peppery perfume and soft bitterness.
Hallertau Mittelfrüh
The quintessential German noble hop. Cultivated in Bavaria's Hallertau district, its high humulene oil content imparts an unmistakable refined, gentle, noble aroma to classic German lagers and weissbiers.
Galaxy
Australia's flagship export hop. Galaxy features one of the highest concentrations of essential oils in any commercial hop, unleashing pungent waves of passionfruit, peach, and citrus in late kettle and whirlpool additions.
Cascade
The hop that launched the American craft beer revolution. First released by USDA-ARS in Corvallis, Oregon in 1972, Cascade's signature floral grapefruit notes became legendary through Sierra Nevada Pale Ale.
Simcoe (YCR 14)
Introduced in 2000 by Yakima Chief Ranches, Simcoe is revered for its unique dual character: deep forest pine resin fused with exotic passionfruit and stone fruit, with very low cohumulone for a smooth bittering quality.
Amarillo (VGXP01)
Discovered growing wild by Virgil Gamache Farms in Washington, Amarillo is celebrated for its signature sweet orange marmalade and summer peach aromatics. Extremely low co-humulone (21-24%) gives it a remarkably soft, non-astringent bitterness.
Chinook
Bred in 1985 by crossing Petham Golding with a high-alpha USDA male, Chinook is the undisputed backbone of classic Pacific Northwest craft brewing. Renowned for its pungent, bold pine forest aroma and lingering grapefruit peel bite.
Columbus (CTZ)
Part of the famed CTZ trio (Columbus, Tomahawk, Zeus), this high-alpha powerhouse delivers intense dank, pungent, and resinous qualities. In early boil additions, it provides a firm, clean bitterness; in dry hop additions, it imparts deep herbal cannabis punch.
East Kent Goldings (EKG)
The premier English noble-style hop, cultivated in Kent since 1790 and protected under European PDO appellation laws. Defined by exceptionally high humulene and low myrcene, EKG yields an aristocratic, perfumed bouquet of wild honey and lavender that defines traditional British ales.
Nelson Sauvin
Bred by New Zealand Plant & Food Research and released in 2000, Nelson Sauvin is named after the Sauvignon Blanc grape due to its uncanny white-wine character. High levels of polyfunctional thiols give it a distinctive tropical gooseberry and freshly crushed grape profile unlike any northern-hemisphere hop.
El Dorado
Developed by CLS Farms in Moxee, Washington and released in 2010. El Dorado is famous in modern craft brewing for its intense, sweet candy-like aromas: candied watermelon, ripe Bartlett pear, and soft stone fruit that add irresistible juicy fruit character to whirlpool and dry hop charges.
Sabro (HBC 438)
Bred from wild indigenous American Neomexicanus hop female genetics collected in New Mexico mountain ranges. Released by the Hop Breeding Company in 2018, Sabro yields a mesmerizing, distinct profile dominated by rich creamy coconut, ripe pineapple, and tropical cedar.
Idaho 7 (007: The Golden Hop)
Bred by Jackson Hop Farm in Wilder, Idaho and released in 2015. Idaho 7 produces an intoxicating blend of juicy sweet citrus (tangerine, Seville orange marmalade) anchored by intriguing black tea and pungent pine needles. It has rapidly become an essential pillar of modern craft IPAs.
